Buckwheat Lentil Patty

This came out of my desire to have some indian pakoras or lentil patties. As I am trying to reduce my simple carbs intake, this needed to be without large amount of all purpose flour. I usually go with eye measurements so this is a guideline, not a tested measurement. It can be tweaked based on how thick or wet the dough is.

Ingredients

  • one cup chana dal , soaked overnight

  • one cup buckwheat flour

  • 3/4 cup coconut flour

  • one carrot

  • half onion

  • 2tsp cumin seeds

  • half knob of ginger

  • 2 garlic gloves

  • 2-3 green chilies

  • 1tsp red chilli/paprika

Note - I used half of my buckwheat discard , from the buckwheat sourdough starter. It can be used to replace half cup of buckwheat flour. Similarly, coconut flour can be increased if the dough turns out wet as it helps absorb most of the moisture.

Steps

1. Blend everything together except flours in a high speed blender or food processor

2. Mix flours in a bowl and pour the wet mixture in another.

3. Slowly mix dry into wet ingredients, scraping sides to ensure it’s not super wet. We want to make small dough balls, so it should be a bit thick.

For shallow fry

4. Heat avocado oil in a pan over medium flame.

5. Take a scooper or use spoon to pour ball size batter in the pan.

6. Slightly flatten the top with your spoon and let one side get brown nicely.

7. After a couple mins, check if the pan side is brown, if so flip balls carefully.

8. Scoop out into a plate and enjoy with any sauce. I used my home made hot sauce.

For baking

1. Make small balls and line a tray with parchment paper.

2. Heat the oven to 400F

3. Plop the balls on tray and flatten the tops a bit

4. Oil the top of balls with a brush or just pour a bit of oil on each dough ball.

5. Put it in over and cook for 20 mins.

6. Flip tray and cook for another 10

7. Immediately take off the hot sheet and out out on a bowl or a plate.

Note : baking will make these dry. Since there is not much oil, the texture would a bit crumbly and softish rather than crispy. I put mine back in pan for quick couple mins to have them absorb some of the oil.

That’s it! It’s yummy and a quick snack handy for a busy day (although we finished ours in couple hours lol)

It can be stored in a hot box wrapped in tea towels to keep the moisture in.
